A fellow-fishing enthusiast and friend, while
on a fishing trip to the Florida Keys four years ago, first introduced me to
Forschner fillet knives. I watched as he almost effortlessly filleted 30 dolphin and only
had to touch up the blade once. He explained that it was the only knife he has used for
years and how easily they sharpened and how well they kept an edge.
I have used many different fillet knives over the years but I was not happy with their
quality and usability. I decided to give Forschner knives a try and was impressed
instantly. They are the only fillet knives I currently use and the only ones we sell on

The History and Technology of
R. H. Forschner Knives
The R. H. Forschner Knife Company has been in business since 1855. Since that time they
have become renowned for their extremely sharp, Swiss made, stainless steel blades by
Victorinox. The blades are made of high carbon stainless steel that have been heat treated
with a special tempering process to produce an edge that can be sharpened easily and
repeatedly. They have taper ground beveled edges which is world renowned for its razor
sharpness, not hollow ground like some other blades. These knives can stand up to years of
daily use without undue wear and deterioration. Each knife has a sure grip handle with
finger guard. The Fibrox handles offer a comfortable grip and are slip resistant when wet.
